"This is a really good recipe for spicy chicken curry. It's pretty easy to make and tastes really good!"
Ingredients:

1 whole chicken
·
1 tsp of Cumin Seeds (Jintan)
·
1 - 2 Anise (Bunga Lawang)
·
1 Cinnamon (Kayu manis)
·
1 Onion , chopped
. 1 Screwpine / pandan leaves
. 1 Screwpine / pandan leaves
·
2 Potato , cut into small pieces
·
1-2 Tomato, cut into small pieces
·
5-6 tbsp of Curry Powder (Serbuk kari ayam)
·
1 tbsp chili powder (Serbuk cili)
·
Curry leaves
·
Salt for taste
·
2-3 cups thin coconut milk
·
2 cups think coconut milk
o
Both Extracted from ½ grated coconut
Grind paste:
·
1 onion,
·
1 medium Tomato
·
5 cloves of garlic,
·
1 one inch piece of Ginger
(Grind them together with adding title water as the
tomato kind of juicy. We do not need a smooth paste, blend just until you do
not see any big chunks of garlic/ginger)
Preparation:
1.
Cut the chicken into small pieces and
marinate with turmeric and Chilli powder.
2.
Heat oil, add the Cumin,
Anise, Cinnamon, pandan leave and Curry leave. Once its release nice flavourful smells add the chopped onions and sauté for 4 mts.

Now add the grind paste. Mix well and cook for 3
minutes until the ginger-garlic paste lose their raw smell.
4.
Add the marinated chicken, cook on high flame for 4-5 minutes.
5.
Add the chilli powder, curry powder and pour thin coconut milk. Reduce
the heat, add potato and adjust salt. Cook till chicken pieces are soft and you
get the desired curry consistency.
6.
Lastly, add the thick coconut milk and add tomato pieces. Continue
to cook until gravy is slightly thick.
Serve hot with a bowl of steamed
rice… Yummy :0)
