Murungai Keerai Soup (Drumstick leaves soup)

 



Healthy soup made with Murugai Keerai/drumstick leaves. Lets we see the

Benefit of Murungai Keerai :

·         Boosting stamina.

·         Controlling diabetes. (reduce the sugar level in the blood)

·         Lowering cholesterol.

·         Detoxifying the body and reduces body heat

·         Helps you to get strong and healthy hair

·         Helps in blood circulation and improves the level of the pure blood in the body.

 

Ingredients

·         1 and 2 cups Murungai Keerai / drumstick leaves

·         ½ tsp jeera

·         1 tsp Mustard seed

·         2 Red dry chili

·         1 tsp crushed garlic

·         1 tsp crushed ginger

·         6 - 7 small onion finely sliced

·         1 small tomato chopped roughly

·         ½ tsp turmeric power

·         3 cups water

·         salt to taste

·         ½ tsp pepper powder

 

Instructions

1. Pluck the drumstick leaves from the stem. Rinse it well and drain the water. Set aside.

2. Heat oil in a pan – add mustard seed and jeera let it crackle, add red dry chili.

3. Add crushed garlic and ginger saute for a min. Add onion and saute till golden.

4. Then add tomato, saute till tomatoes turn mushy

4. Add turmeric powder and mix well then add cleaned drumstick leaves. Saute for 2 to 3 mins until the raw smell leaves.

5. Add water and let it boil for a good 5 mins.

6. When it’s boiling add salt for taste and pepper. Cook for a minute and switch off.

Now it’s the healthy nutritious soup is ready.

Ayam Masak Lemak




Ingredients :

-500gm Chicken (or half chicken)
-Salt to taste
-1/2 tsp Turmeric powder
-100 ml canned coconut milk + water around 300ml OR equivalent amount from 1/2 coconut (I use grated coconut and blend with little of water)
-1/2 Turmeric leaf (Daun Kunyit)
-1 inch Lemongrass  - bashed
-1 or 2 potatoes (optional), cut into wedges or cube.
·                 
Ingredients to be ground (Ingredient B)
·        I red Onion
·        2 small clove Garlic
·        10 Green bird’s eye chillies (Cili Padi Hijau)
(10 is not that hot, if you want add spicy than add more)
  •    1 inch Ginger
  •    1 inch Turmeric root (Kunyit Hidup)
·        2 red chillies

Instructions :

1.   Coat the chicken pieces with turmeric powder and the salt. 

Set aside while you get all the other ingredients ready.

2.   Grind the ingredient B (except Red chili) to a fine paste 

then add red chili and grind roughly (so we can see the red chili piece, this will give a nice color combination later).

3.   Heat the oil in a large saucepan or wok, put lemon grass and chili paste into wok. After a while (around 2 minutes) add in the chicken pieces.

4.   Let it cook until the meat has taken some color (around 5 minutes), then pour in the coconut milk. (If use freshly squeezed coconut milk, add only the second pressings, reserving the thick coconut milk at the end). Make sure amount of liquid covers the chicken, if not add more water. Put in potatoes, Stir well and reduce the heat to medium low and simmer for around 30 minutes, until your chicken is cooked.

5.   Then add salt, turmeric leaf and balance milk, gently stir, for 1 minutes and turn off the heat.

6.  Dish up with some plain rice and a side vegetable dish or salted egg. 


** If you want dry gravy, you may fry the chicken ¼ cooked before cook lemak.
** frequently stir after the coconut milk is added into the chicken.

Coconut Jelly (Jelly Kelapa Muda)




Ingredients:
  • 1 package gelatin powder -10 grams (I use gelatin strips 20gram)
  • 2.5 liters of coconut water - the result of three young coconuts if less you may add plain water.
  • Young coconut meat –(Isi Kelapa Muda)
  • 11 tablespoons of sugar (I use normal sugar and lump sugar)
  • Pandan flavor and green coloring also can (Optional)
  • 3 pandan leaves


Preparation:
  1. Put the Coconut water, Pandan leaves and Jelly strips into pan and boil. Once the jelly is melting put the sugar.   (If you using Jelly powder; Put the coconut water, jelly powder, sugar and pandan leaves to in the pot.)
  2. Wait until boiling and add the coconut meat. Off the stove.
  3. Pour the Jelly into the mold
  4. Chill in the refrigerator and serve once it’s ready.

  • 2 slices of sandwich bread, you may lightly toast the bread
    (
    make sure it’s dry a little bit)
  • 1 tbsp butter / oil
  • Pepper / salt for seasoning / Red chili flakes (which ever you like as per your taste)
  • Mold (5 cm or more), or use egg ring or cup
