Ayam Masak Merah



Ayam Masak Merah is one of famous Malaysians chicken recipe. The cool thing about this it's  calls for very basic ingredients, so you can whip up this no time. It's one of the easy and delicious menu. Let's we see ...

Ingredients:

1 chicken – (Smear turmeric and salt than fry half cook)
2 star anise
1 cinnamon stick
2 tablespoons chili sauce
60 ml coconut milk
250 ml water
3 tomatoes - cut into 4
Salt to taste
Sugar to taste
Oil for frying
Peas - optional

Finely ground ingredients (Bahan Kisaran):
4 onions
5 shallots/Bawang Merah
5 cloves of garlic
2 cm ginger
15-20 dried chillies - briefly boiled and minced

Sliced Ingredients (Bahan Hirisan) :-
3 onions
5 cloves of garlic
2 cm ginger - sliced into 3 pieces

Let we look on how to prepare:-

Heat oil in a pan and sauté the shallots until turn translucent and slightly golden, Then add chopped ingredients and mix well.

Then add the ground ingredients and chili sauce. Stir fry until the oil starts to separates (Pecah minyak).

Now add the fried chicken which half cook fried. If fried crisp, the chicken will be hard.
Stir well and leave it a while.

Add water and then add coconut milk into the chicken, the gravy is according to your preference.

Add the tomatoes and salt. After a while Sprinkle a little sugar, if preferred. Continue cooking on medium heat till the chicken is cooked. If you prefer you can add some green peas, before switch off the flame.

Now it’s ready to be served with  various type of rice. But its famous combination was Nasi Minyak.
