Carrot Rice

We all love variety rice, Carrot Rice is one such easy and tasty variety rice recipe which require minimal ingredients and it's easy to prepare plus taste delicious. Carrot is actually rich with vitamin which good for eye.  

This recipe is my Grandma  special, and I was pretty impressed with my grandma <3.

Ingredients :)

Rice - 2 Cup

Carrot - 2 Large (Grated)
Ghee - 3 tbsp
Cinnamon - 1 inch piece
Cardamom – 4 piece
Star anise – 2 piece
Ginger-Garlic Paste – 1 tbsp 

Red Chili – 1 
Pandan Leaves - 2
Onion - 1 small (Chopped)
Cashewnuts - 8-10 Raisin 10-15

Salt - To Taste
Few drops of yellow food colouring Turmeric powder   
Water (According to your rice)


Preparation :)



  1.  Heat the ghee in pot. Add Cinnamon, Cardamom and star anise

  2.  Than add the chopped Onion, Chili, Daun Pandan, Raisin and Cashuwnuts once          
       its 
fragrant you may add the Ginger-Garlic paste, stir for 3-4 minute.

  3.  Than add Carrots and sauté until carrot become soft (around 5 minutes).

  4.  Add Rice, salt and stir till it mix well.

  5. Than place all the ingredients into the rice cooker, add water and cook.

And its ready to eat… I was a little hesitant about making this at first, But after few trial now my carrot rice turned out great. I am totally loved it.. <3
